A young Swiss named Emil Frey is the cheese maker who made invented the Liederkranz Cheese way back in the year 1891. The name of this particular cheese he made was derived from a local singing group Liderkranz Club. Anyways, this Emily Frey Cheese is made off cow's milk like most of the cheese we know but, it has an edible yellow pale crust that makes it look like a pie of some kind.
If you aged this cheese correctly, it could smell like amonia and could have a mildly pungent flavor that makes it tastes like a limburger cheese but, what makes it different is the bacterial culturing used in it.
